牛柳(Tenderloin)為牛腰背的內側後段肌肉, 是牛隻極少郁動到的肌肉,  由於牛活動時較少郁動到, 故此肉質最為細嫩, 且脂肪含量較低, 口感柔軟。

 

調味建議: 少許岩鹽及黑

 

The tenderloin is located on the beef loin. Since the cattle have less activities when they move, therefore this part of meat becomes tender and softer with a lower fat content.

 

Recommended Seasoning: A little rock salt and black pepper.
